Deep serotyping could reduce Salmonella in preharvest poultry

Next generation gene sequencing and analytics could provide the poultry industry with greater insight on Salmonella serotypes preharvest, resulting in earlier interventions and better food safety,

“Instead of the most abundant serovar being detected on a plating technique, now we can detect 150 plus serotypes in a single test,” Kaitlin Karschner, technical product manager, Ancera, said.

At the 2023 Poultry Tech Summit, Karschner will share how the platform technology helps food producers better understand the dynamics of Salmonella serovars throughout the poultry supply chain, which can ultimately reduce the load entering downstream processing facilities.

How it works

Ancera's Salmonella System Monitoring (SSM) with deep serotyping technology uses CRISPR-SeroSeq to identify and track the granular changes in Salmonella serotypes in a poultry house over time.

Salmonella in poultry is under intense scrutiny right now. In the Fall of 2022, the U.S. Department of Agriculture (USDA) Food Safety and Inspection Service (FSIS) unveiled a proposed framework to improve Salmonella control in poultry products, with an emphasis on pre-harvest interventions.

“Plating can only pick one or two serotypes out of a possible multiple serotype culture. But what’s really cool about this is that it identifies all of the CRISPR spacers and then it determines which serotypes are in the sample,” explained Karschner.

Advanced analytics can then categorize the serotypes present in a poultry house into risk categories, highlighting changes in Salmonella over time and identifying potential food safety risks to allow for earlier interventions and treatments.

The technology also allows for better traceability throughout the supply chain to pinpoint transmission sources.
