First-of-its-kind fungal protein plant underway in Brazil

The project will receive subsidies to support shrimp and salmon producers in Brazil and neighboring countries like Ecuador and Chile.

A new fungal fermentation plant underway in Brazil — the first of its kind outside Europe — could bring alternative proteins to South America's seafood industry.

The fermentation project, a collaboration between Finnish biotech company Enifer and Brazilian ethanol producer FS, will initially produce 500 metric tons of fermented protein to provide prospective customers with samples for trialing the product, according to Enifer CEO Simo Ellilä. In the long term, the plant could scale up to produce 10,000 metric tons of protein annually, Ellilä said.
