For decades, phytase has been celebrated as the enzyme that unlocks phosphorus from plant-based ingredients. That is still true, and still valuable. But after the initial phosphorus studies were completed, a new narrative emerged: Phytase was not only a phosphorus saver, but also a “multi-nutrient enhancer.” This is not so much promoted today, but we still hear claims of extra amino acids, trace minerals and even energy being released once phytate is broken down.
