Fruit disinfectant could improve food safety in poultry

The process is a combination UV, ozone and hydrogen peroxide.

A novel process originally developed to disinfect fruit and vegetables could target and destroy pathogens throughout the entire poultry supply chain.

“We came up with a process that worked well for apples and other fruits and vegetables,” said Paul Moyer, co-owner, Clean Works Corp., adding that “we’ve done numerous studies on chicken and eggs for Salmonella and on both the crates, the eggs and the chicken meat itself.”

At the 2023 Poultry Tech Summit, Moyer, alongside Keith Warriner, professor, Department of Food Science, University of Guelph, will discuss the potential of hydroxyl-radicals as a disinfectant for the poultry industry.

Hydroxyl-radicals

Hydroxyl-radicals are short lived but potent antimicrobial agents that can inactivate a broad spectrum of microbes with no negative effect on the surface being sanitized. They are generated from the UV-C mediated degradation of hydrogen peroxide vapor and ozone gas and applied as a continual process.

“It’s not UV. It’s not ozone. It’s not hydrogen peroxide. It’s the three things together,” explained Warriner.

The system does not use water, as it can be a vector for pathogens.

Currently, formaldehyde is the main disinfection agent used with hatcheries. However, it represents a hazard to workers, a time-consuming batch process, challenging to control and can negatively affect chick health. Moreover, the EU is introducing regulations to ban the use of formaldehyde in agriculture that includes egg disinfection.
